Thai Food to Savour – Kai Tom Khem

Once an ordinary and ubiquitous dish available at any rice and curry place, kai tom kem, the real one, is now hard to find and it is best making your own especially during the busy days and weeks when you need one pot ready for a quick, home-cooked meal anytime!

After receiving this wonderful recipe from a good friend who is a meticulous home cook, I made my first batch of Kai Tom Khem which is eggs and pork braised with Thai herbs and palm sugar. This intensely sweet and salty dish carries a Chinese influence. Some people add cinnamon sticks and star anise into the soup before simmering it down until the eggs are thoroughly and naturally browned without the now commonly-used help from sweet dark soy sauce. Best served with steamed rice, preferably organic.
